Abstract The objective of this study was carried out to evaluating the productive performance, the physical-chemical quality of the milk, the physical-chemical and sensorial quality of rennet cheeses obtained from the milk of goats submitted to diets with diferente levels of guava agroindustrial waste (GAW). The goats were randomly distributed in a Latin square (4x4) according to the substitution levels (0, 14, 28, and 42%) of inclusion GAW in the diet. The consumption of natural and dry matter increased with the increase in hay substitution. However, the physical-chemical requirements of milk and cheese were not altered.

Abstract The objective of this study was to evaluate the production, fat and fatty acids of milk as well as the diameter, classification and quantity of the milk fat globules (MFG) of goats consuming a diet with 15% of crude glycerin. Twelve multiparous Saanen goats weighing 40 ± 6 kg and 90 ± 5 days of lactation were used. The experimental design was completely randomized with two treatments (0 and 15% inclusion of glycerin). In this way, each milk sample is classified according to the percentage of milk fat globules that were included in these three size categories. For the variables milk production, fat, diameter, medium and large fat globules and amount of globules showed a significant effect of the inclusion of glycerin in the diet (p < 0.05). Fifteen fatty acids were found, mostly saturated. For caprylic, palmitic, and linoleic fatty acids, there was no significant influence of the inclusion of glycerin (p > 0.05). Can recommend the use of 15% double-distilled glycerin in the feeding of lactating goats increased milk production, the amount of fat, increased the size of the milk fat globule. Regarding the saturated and polyunsaturated fatty acids, they kept the level of 15% of glycerin.

Abstract The objective of this research was to evaluate the production, milk quality, consumption and financial analysis of milk from goats consuming diets with different levels of double-distilled glycerin. Twelve multiparous Saanen goats, weighing 40 ± 6 kg and 30 ± 5 days of lactation, kept in a confinement system for 60 days were used. The goats were randomly distributed in a Latin square (4 x 4), according to the levels of double-distilled glycerin. The ingredients used were tifton hay, ground corn grain, soybean meal, vitamin/mineral supplement, urea, and double-distilled glycerin levels (0, 6, 12 and 18%) to replace corn in the diets. The milk fat of goats fed with double-distilled glycerin in the diet showed a decreasing linear regressive effect (P = 0.001). Dry matter intake showed a quadratic regressive effect (P = 0.033). Evaluating the total cost of each diet, it was observed that the level containing 0% glycerin was the diet with the lowest cost per kilogram. The use of double-distilled glycerin in the feeding of dairy goats can be recommended up to the level of 18% of corn replacement without harming milk production, however, it is necessary to verify the economic viability, considering that there will be losses in the quality of the milk produced.

Abstract The study aimed to evaluate tannic acid's influence on lactating cows' diets on milk production and lipid composition. Five crossbred cows (Holstein x Zebu), distributed in a 5 × 5 Latin square, were used to evaluate the effect of increasing tannic acid (hydrolyzable tannin). The diets were composed of 35 kg of corn silage as bulking and 6.38 kg of concentrate. The treatments consisted of increasing levels of tannic acid added to diets (0%, 1.3%, 2.6%, 3.9% and 5.2%). It was observed a decreasing linear effect (P<0.05) of the inclusion of tannic acid in the concentration of saturated butyric fatty acids (C4:0) presenting a mean of (2.99), and quadratic effect in the concentration of saturated fatty acids lauric (C12:0) presenting mean (26.74). The addition of tannic acid had effects on saturated fatty acids, decreasing the concentrations of butyric acid and increasing the concentrations of lauric acid. Atherogenicity and thrombogenicity rates reveal the potential for the prevention of coronary heart disease. However, the observed changes do not compromise the milk's chemical composition and nutritional quality,the y nutritional quality of the milk, presenting possibilities of human health benefits, thus enabling the aggregation of value for these products.

Abstract The study aimed to evaluate the effect of adding tannic acid to the diet on the milk quality of cows. The five primiparous crossbred cows (Holstein x Zebu) were used, with about four years old, the average body weight of 420 ± 30 kg, 100 days of lactation initial average production of 18 ± 4 kg of milk/cow/day. The treatments consisted of increasing tannic acid (0; 1.3; 2.6; 3.9 and 5.2%) to replace corn bran in the diet, based on dry matter. The sensory attributes of odor had a significant effect (P < 0.05) of the inclusion of tannic acid in the diet. The odor attributes showed a lower average for the control treatment, and these attributes also showed orthogonal contrast, except the characteristic cow, that is, the control group differed from the treatments as the tannin was introduced, the attribute value became higher compared to the control group. The inclusion of 5.2% tannic acid in dairy cows’ diet promoted a slight variation in the taste of milk. However, it did not alter the quality or acceptance of this milk by consumers.

Abstract The objective of this study was to evaluate the effects of replacing corn by double-distilled glycerin, a co-product of the biodiesel industry, on goat curd cheese in terms of physical-chemical, microbiological and sensory aspects. Twelve multiparas Saanen goats weighing 47.07 ± 2.41 kg and at 90 ± 5 days of lactation. The experimental design was completely randomized with two treatments (0 and 15% inclusion of glycerin). The physicochemical parameters analyzed were: fat (%), non-fat solids (%), protein (%), lactose (%), salts (%), relative density at 15/15 °C (gmL-1), index cryoscopic (°C), electrical conductivity (mScm-1), pH and acidity. The milk from each treatment was used to make the rennet cheese. The fat had a significant effect (P < 0.05) with inclusion of glycerin in the diet. The physicochemical characteristics of the cheese were influenced (P < 0.05) by feeding up to 15% of glycerin. Regarding sensory attributes, only firmness was influenced (P < 0.05) by the inclusion of glycerin in the diet of dairy goats. Bidistilled glycerin, when inserted in the diet of dairy goats at a level of 15%, causes a reduction in the lipid content of milk and cheese, consequently affecting the cheese yield, and the parameter of firmness in the sensory of the evaluated cheeses.

Abstract The objective of this study was to evaluate the effects of replacing corn with bidistilled glycerin from the biodiesel industry on the physicochemical, microbiological, and sensory quality of milk and goat cheese. Twelve Saanen multiparous goats weighing 40 ± 6 kg and 30 ± 5 days of lactation were used. The physicochemical parameters analyzed were: fat (%), non-fat solids (%), protein (%), lactose (%), salts (%), relative density at 15/15 °C (gmL-1), index cryoscopic (°C), electrical conductivity (mScm-1), pH and acidity. The milk from each treatment was used to make the rennet cheese. The physicochemical variables: pH, lipids, ESD, and cheese yield had a significant effect (P < 0.05) for the increasing use of bidistilled glycerin in the goat feeding. The pH, acidity, EST, ESD, and yield variables presented linear regressive effect and lipids quadratic regressive effect. The softness sensory attribute had a significant effect (P < 0.05) for the increasing levels of bidistilled glycerin in the goat diet; the softness decreased as the glycerin level increased. Bi-distilled glycerin, when inserted in the diets of dairy goats at increasing levels, promotes a reduction in the lipid content of milk, consequently affecting the cheese yield and the sensory softness parameter.

ABSTRACT. The physical-chemical characteristics and sensory attributes of milk are variable. This study aimed to evaluate how spineless cactus varieties resistant to carmine cochineal (Dactylopius sp.) influences the composition and sensory characteristics of goat milk. Twelve lactating goats with body weights of 51.35 ± 3.75 kg were distributed in a 4 × 4 Latin square, with three simultaneous squares composed of four animals, four periods, and four experimental diets: Control - goats fed tifton grass hay and concentrate; SCOE - goats fed the Orelha-de-elefante spineless cactus, tifton hay, and concentrate; SCB - goats fed the Baiana spineless cactus, tifton hay, and concentrate; SCM - goats fed the Miúda spineless cactus, tifton hay, and concentrate. The levels of protein and non-greasy solids and the sensory attributes of the milk (odor, butter flavor, and global acceptance) did not differ between the treatments (p > 0.05). The lipid content of the milk was reduced in the SCOE treatment compared to the control (p = 0.0014). The milk obtained from animals fed the SCOE and SCM treatments had a stronger flavor (p < 0.05). These results suggest that varieties of spineless cactus resistant to carmine cochineal can be used as goat feed without affecting milk production or global acceptance.

ABSTRACT The study aimed to verify the effect of diet and environmental temperature on traits of milk fat globules (MFG) of goats. The experiment was conducted in climatic chambers, where we housed 12 Alpine goats with a mean age of 4.02±1.78 years, live weight of 41.8±4.59 kg, and average milk production of 2.16±0.59 kg. The animals were subjected to two different controlled temperatures, T1 = 26 ℃ (thermoneutral) and T2 = 34 ℃ (stress), and diets with different energy levels (low, medium, and high). A milk sample of each animal was collected at 6.00 h, coinciding with milking. The effect of temperature and diet was verified on MFG. The highest MFG was observed at 26 ℃ and medium energy diet. The MFG reached lower values with the diet of medium energy and high temperature (34 ℃). On average, 35% of MFG is smaller than 2 μm, 50% is medium in size (2-5 μm), and 15% is large (>5 μm), with a maximum size of 9.57 μm. The higher prevalence of medium-sized MFG is indicative of excellent milk digestibility. The increase in dietary energy levels promoted both the fat and diameter of fat globules. The higher fat and the larger globules would positively affect the cheese-making aptitude and make it suitable for production of hard cheeses. The increase in dietary energy levels for goats promotes an increase in the diameter of fat globules and milk fat (%), essential traits to the cheese industry.

RESUMO O objetivo deste trabalho foi avaliar o efeito da inclusão de níveis crescentes de resíduo agroindustrial de goiabeira (RAG) no comportamento ingestivo de cordeiros Santa Inês. Foram utilizados 40 cordeiros não castradas da raça Santa Inês, com peso inicial de 21,33 ± 2,62 kg e idade de 120 dias, distribuídos em delineamento inteiramente casualizado, com 5 tratamentos e alimentados com níveis crescentes de GAW (0,0; 7,5, 15,0, 22,5 e 30,0%). O ganho médio diário (GMD) apresentou contraste ortogonal (P <0,05), no qual os animais que ingeriram a dieta controle tiveram desempenho inferior. Os animais com GAW adicionado à dieta obtiveram maiores ganhos de peso refletidos em uma melhor conversão alimentar. Entre as variáveis, ociosidade, alimentação e tempo total de mastigação tiveram efeito significativo (P <0,05); os animais passaram mais tempo ociosos no nível de inclusão de 30,0% e menos tempo no grupo controle. No entanto, as médias dos níveis de inclusão de 7,5, 15,0 e 22,5% no GAW foram estatisticamente semelhantes às do grupo controle e ao nível de 30,0%. Houve efeito significativo (P <0,05) na eficiência alimentar, com os menores valores sendo apresentados para o grupo controle e os maiores valores no nível de inclusão de 30% do GAW. A alimentação de 30,0% GAW para cordeiros em confinamento reduz o tempo de alimentação e mastigação total, prolonga a ociosidade e aumenta a eficiência alimentar sem comprometer o consumo de matéria seca e de fibra em detergente neutron e GMD.

ABSTRACT The objective of this work was to evaluate the effect of increasing levels of guava agro-industrial waste (GAW) on the ingestive behavior of Santa Inês lambs. Forty non-castrated sheep of the Santa Inês breed were used, at an initial weight of 21.33 ± 2.62 kg, and at the age of 120 days, distributed in a completely randomized design, with five treatments and fed with increasing GAW levels (0.0, 7.5, 15.0, 22.5 and 30.0%). The average daily gain (ADG) showed orthogonal contrast (P <0.05), in which the animals that ingested the control diet had lower performances. The animals with GAW added to the diet obtained more significant weight gains reflected by a better feed conversion. Among the variables, idleness, feeding, and total chewing time had a significant effect (P<0.05); animals spent more time idle at the 30.0% inclusion level and less time in the control group. However, the means of the 7.5, 15.0, and 22.5% GAW inclusion levels were statistically similar to the control group and the 30.0% level. There was a significant effect (P<0.05) on feed efficiency, with the lowest values being presented for the control group and the highest values at the 30% inclusion level of GAW. The 30.0% GAW feed for lambs in confinement reduces feed time, and total chewing prolongs idleness and increases feed efficiency without compromising dry matter intake, neutral detergent fiber intake, and ADG.

Abstract The aim of this work was to determine the sensory quality (flavour, odour, tenderness, juiciness and overall acceptability) and physicochemical characteristics of meat from Santa Inês lambs fed with diets containing guava agroindustrial by-product (GAB). Was used samples of the longissimus lumborum of 40 entire males with an average slaughter weight of 32.0 kg, after approximately 105 days in a feedlot. Animals were randomly placed into four treatments (10 replicates per treatment) and fed with different levels of GAB (0, 20, 40 and 60%). Among the attributes examined, only odour was not influenced by the GAB. Inclusion of 40% GAB in diets (in place of corn) produced meat which satisfied consumer demands in terms of fresh colour, although with less intense flavour and tenderness. Although the factors juiciness and overall acceptability did not differ among the highest levels of GAB, we recommend to use GAB addition of up to 40% to avoid compromising on animal performance and consumer sensory characteristics.

ABSTRACT The objective of this work was to use biometric measurements to predict carcass characteristics of lambs of the Morada Nova breed. We used 48 lambs with mean initial body weight (BW) of 15.0±0.04 kg and slaughter body weight (SBW) of 26.37±2.43 kg. The animals were weighed weekly and underwent a period of adaptation of 15 days before slaughter. The biometric measurements were obtained the day before slaughter, comprising body length, withers height, rump height, thigh length, breast width, rump width, thigh perimeter, rump perimeter, thorax perimeter, leg length, and body condition score. Additional measurements included slaughter BW and empty BW (EBW). The data recorded at slaughter comprised the weights of the viscera, carcass, and internal fat and offal. The in vivo measurements of body length were present in most of the equations for predicting the SBW, EBW, hot carcass weight (HCW), and cold carcass weight (CCW). The SBW and EBW presented a variation of approximately 9%. The variables that evaluated the carcass, HCW, and CCW demonstrated less data variation than SBW and EBW, which was probably because these measurements were obtained following evisceration and skinning, thus removing factors of more significant variation in vivo . The prediction models found in the present study varied with an R² of 0.49-0.93, indicating high levels of variation. In sum, biometric measurements can be used to predict the carcass characteristics of Morada Nova lambs with different body conditions.

ABSTRACT The objective of this study was to evaluate performance traits, intake, nutrient apparent digestibility, and economic analysis of lambs fed diets containing different levels of sunflower cake (SFC) with a certain chemical composition. Thirty-six Santa Inês × Dorper lambs (n = 9 per treatment diet) with an average body weight (BW) of 19.5±2.19 kg at the beginning of the study were randomly allocated to four isocaloric and isonitrogenous diets for 63 days. A control diet without SFC was compared with diets containing 5, 10, and 15% of dietary dry matter (DM) of SFC replacing soybean meal and corn. Growth performance and economic indicators were calculated. Moreover, individual faeces were collected using canvas bags to evaluate the apparent digestibility of nutrients between days 30 and 45 of study. The total BW gain linearly decreased with the inclusion of SFC in the lamb diet. However, no differences among treatments were observed for final BW, average daily gain, average daily feed intake, or feed conversion ratio. The inclusion of different levels of SFC in the diet reduced the intakes of DM as g/kg BW and non-fibre carbohydrates on DM basis. The apparent digestibility of all nutrients studied improved with the inclusion of 5% SFC but decreased with diets containing 10 or 15% of SFC. Moreover, the higher benefit:cost ratio was obtained for diet containing 5% SFC. Therefore, SFC from biodiesel production could be used at levels of 5% in lamb rations, reducing feeding costs without worsening productive performance, nutrient intake, and digestibility at the ages studied.

ABSTRACT The objective of this study was to evaluate the effect of guava agroindustrial waste (GAW) on ruminal parameters (pH, N-NH3, and microbial protein), volatile fatty acid (VFA), and morphometry of the rumen and intestine of sheep. A total of forty Santa Inês sheep (120 days old and 21.3±2.62 kg) were used. The animals were fed diets with 0, 7.5, 15, 22.5, and 30% inclusion of GAW. The pH, ammonia nitrogen, microbial protein, and VFA were evaluated in the ruminal fluid, alongside the morphometric characteristics of the rumen and intestine. The inclusion of GAW linearly increased fasting and postprandial pH, N-NH3 only showed a quadratic effect for fasting animal, whereas MP presented a quadratic effect for pre- and post-prandial animals. There was a quadratic effect for papilla width, with a maximum value of 393.33 μm at the level of 34.43% GAW in the diet. The papilla absorption area showed a linear effect, in which increasing levels of GAW in the diet had a smaller area of papillae absorption. The inclusion of GAW in the diet of Santa Inês sheep favored pH neutrality, reduced N-NH3 and ruminal MP concentrations, decreased the thickness of the rumen muscular layer, and increased the intestinal mucosa, favoring greater absorption of nutrients.

RESUMO Anthelmintics são usados para combater nematodes. O mau uso de anti-helmínticos pode aumentar o custo da produção de leite. O objetivo desta pesquisa foi determinar a presença de anti-helmínticos no leite de cabra. Foram utilizados vinte cabras, divididos em quatro grupos de cinco animais: I - animais tratados com um antihelmíntico à base de ivermectina; II - animais tratados com moxidectina; III- animais tratados com cloridrato de levamisol; E IV: animais tratados com albendazole. Amostras de leite foram coletadas individualmente: antes, e 1, 2, 3, 15 e 21 dias após a administração dos anti-helmínticos. A determinação dos resíduos antihelmínticos foi realizada por cromatografia líquida-espectrometria de massa (LC-MS). De acordo com os resultados, houve um efeito exponencial (P <0.05) para ivermectina e moxidectina. A moxidectina foi o anti-helmíntico que deixou um resíduo no leite por mais tempo, até 21 dias. Contudo, com todos os anthelmintics pesquisados, os resíduos estavam abaixo do limite máximo recomendado pelas agências de inspeção.

SUMMARY Anthelmintics are used to combat nematodes. The misuse of anthelmintics can raise the cost of milk production. The objective of this research was to determine the presence of anthelmintics in goat milk. Twenty goats were used, divided into four groups of five animals: I- animals treated with an ivermectin-based anthelmintic; II- animals treated with moxidectin; III- animals treated with levamisole hydrochloride; and IV: animals treated with albendazole. Milk samples were collected individually: before, and 1, 2, 3, 15 and 21 days after administration of the anthelmintics. Determination of anthelmintic residues was performed by liquid chromatography-mass spectrometry (LC-MS). According to the results, there was an exponential effect (P<0.05) for ivermectin and moxidectin. Moxidectin was the anthelmintic that left a residue in the milk for the longest time, up to 21 days. However, with all the anthelmintics researched, residues were below the maximum limit recommended by the inspecting agencies.
